Think of this as a vegan version of Pho (vietnamese beef noodle soup). Infused with traditional spices like coriander, tumeric and cumin. Makes a light, convenient warming lunch. C’mon, it’s time to try something new other than those MSG, artificially flavored, salt-laden “ramen” soups that you’ve had all your life.
