Curried Pumpkin Soup

4 tablespoons (1/2 stick) of butter 1 large onion 1 medium leek, white part only 1 pound cannedTrader Joe’s pumpkin 4 cups Trader Joe’s chicken broth 1 teaspoon salt 1/2 teaspoon curry powder 1/4 teaspoon ground nutmeg 1/4 teaspoon ground white pepper 1/4 teaspoon ground ginger 1 cup milk Optional: sour cream and parsley (for garnish to make it pretty!) Optional: Use 1 pound fresh pumpkin puree instead of canned pumpkin (tastes the about the same though). *Wash and chop up your onion and leek. *In a medium soup pot melt your butter, and add the onion and leek, stirring occasionally until soft. *Slowly stir in pumpkin, chicken broth, salt, and spices. *Bring to boil. *Lower heat and simmer, uncovered for 15 minutes, stirring occasionally. *Puree the mixture in batches in blender. *Return soup to pot. Add milk and cook over moderate heat, stirring until heated through. Enjoy!
