Ingredients for salad: cooking spray salt pepper 1 pint grape tomatoes 1 1/4 cup Trader Joe’s Harvest Grains Blend, uncooked 3/4 cup scallions sliced 1/2 inch 3/4 cup Kalamata olives halved 1 cup cucumber seeded and diced 1/2 inch 4 oz feta cheese crumbled Ingredients for dressing: 1 garlic clove finely chopped juice of one lemon 3 T light soy sauce 3 T hummus tahini 5 T canola oil 1/4 tsp ground cayenne pepper To make the salad: Pre heat oven to 400 degrees. Place tomatoes on cookie sheet and coat lightly with cooking spray. Sprinkle with salt and pepper. Bake 15-20 minutes until tomatoes are about to split. Set aside to cool. Cook Trader Joe’s Harvest Grains Blend according to package directions omitting butter and salt. Fluff with a fork and set aside to cool on large cutting board or cool cookie sheet. In large bowl, combine roasted tomatoes, cooked grains, scallions, olives and cucumber. To make the dressing: Combine all ingredients in a jar and shake well. Whisk hummus with a fork to help it incorporate if necessary. Pour 1/2 to 3/4 of the dressing over the grains mixture and refrigerate both salad and dressing. Before serving, add more dressing if needed, toss and top with crumbled feta. Makes 6 1/2 cups
