Lazy Summer Weekday Lunch

These ingredients may not say “summer” to most folks, but I find myself making this at least once a week all summer long. It’s fast, easy, healthy, and the perfect thing to grab when I spend my sunny mornings on the deck or puttering in the garden and realize the time has flown and I need to get to work. 1 packet frozen Jasmine or brown rice 1/2 bag frozen Organic Greens with Envy 1/2 jar of Sambhar Lentil Stew Pop rice in microwave according to directions (done in a flash). Cut open the bag and pour contents into a plastic container. Top with greens, then lentil stew. Cover, grab your sunglasses, and go. The time you saved making lunch can be spent putting the top down on the convertible 🙂 Seriously, could there be a better way to start a summer workday? By lunch time, the greens will be thawed. Eat cold or hot. Also makes a great “pantry” dinner on the deck with a bottle of white wine and some frozen naan when unexpected company shows up and you haven’t gone shopping! These are things I always keep on hand. For a variation, sometimes I mix in the 4-pack sausage from the meat section.
