Black Bean and Roasted Corn Chowder

1 tbs. cooking oil 1 small onion, chopped 2 cloves garlic, minced at least 1 cup of chicken or vegetable broth 1 can black bean refried beans 2 cans black beans 1 cup Trader Joe’s frozen roasted corn 1 jar of your favorite Trader Joe’s salsa salt and pepper to taste grated Jack cheese and sour cream for topping (optional) Directions: Saute onion in oil until transparent (about 3-5 minutes) add garlic and cook for about 1 minute stir in 1 cup of broth and refried beans add beans, corn and salsa salt and pepper to taste add more broth to thin consistency if desired cook over medium-low heat and bring to a boil (about 5-10 minutes) Serve with cheese and/or sour cream topping (optional)
