1 Tablespoon Trader Joe Extra Virgin Olive oil 1 small onion, finely chopped 2 (32 oz) containers Trader Joe Organic Free Range Chicken Broth 2 Trader Joe Pesto Parmesan Turkey Burgers, chopped small but still frozen 1 1/2 cups small pasta (such as pastina or acini di pepe) (can also use rice or spaghetti broken into small pieces) 2 cups packed baby spinach, roughly sliced or torn 1/2 cup grated parmesan cheese Place olive oil in a soup pot and warm over medium heat. Toss onions into oil and cook for 2 minutes stirring occasionally until just starting to brown. Add chicken broth. Cover and bring broth to a boil. Add pasta and turkey. Continue to cook uncovered until pasta is done and turkey is cooked through (no more than 10 minutes). Remove pot from heat and add spinach. Ladle soup into serving bowls. Sprinkle parmesan cheese evenly over each. Buon Appetito.
