Summer Pea and Potato Salad with Goat cheese Crumbles

2 cups new potatoes, cooked to a soft firm cut into large diced pieces 1 cup cold cooked fresh baby sweet peas 1 cup chopped green onion and stems 1/2 cup Trader Joe’s ranch dressing 1/2 cup Trader Joe’s goat cheese crumbles Combine the potatoes, peas and onions in a large salad bowl. Add the dressing and toss till coated. Top with the goat cheese crumbles and serve on lettuce beds on individual plates. Serves 6-8
