Porcini Lemon Pappardelle : Serves 2, Preparation time: 20 minutes Ingredients: 1. 1 pack of Trader Joe’s Lemon Pepper Pappardelle pasta 2. 1 tbsp Trader Joe’s EVOO (Extra Virgin Olive Oil)/1 tbsp butter 3. 1/2 cup washed and sliced Trader Joe’s porcini mushrooms (fresh or mixed dried mushrooms from Trader Joe’s also go well with this recipe) 4. 2 cups Water to boil pasta 5. Salt and black pepper powder to taste 6. Fresh parsley and chives to garnish 7. 2 tbsp Trader Joe’s shaved parmigiano reggiano 8. Optional-2 tbsp Trader Joe’s Pinot Grigio Method: 1. If dried mushrooms are used, soak them in 1/2 cup warm water for 15 minutes-may microwave with 1/2 cup water for 2 minutes in stead of soaking if in a rush. 2. Boil water on high flame and then add the pasta with a pinch of salt, pepper and 1 tsp EVOO. When pasta is done, strain and wash with cold water to stop overcooking of pasta. Keep aside. 3. In a non-stick pan, heat remaining EVOO, add mushrooms and saute for 2-3 minutes. Then add pasta and stir on medium flame for 2 minutes. Add salt and fresh ground pepper to taste. 4. Turn the flame again on high and slowly add pinot grigio for added flavor. Let the alcohol evaporate and then turn off the flame. 5. Garnish with liberal amount of shaved parmigiano reggiano, some parsley and chives. 6. Serve hot and enjoy!
