Artichoke Asparagus Parmeggiano

Artichoke Parmeggiano Serves: 2. Preparation time: 5-7 minutes Keywords: Healthy, Yummy, Vegetarian Ingredients: 1. 1 pack Trader Joe’s Frozen artichoke hearts 2. 1 pack Trader Joe’s shaved parmigiano reggiano 3. 1 tbsp Trader Joe’s EVOO (extra virgin olive oil)/1 tbsp butter 4. Salt and Black pepper to taste 5. 4-5 fresh asparagus spears, trimmed Method: 1. In a non-stick pan, heat EVOO/butter until hot. Then add the frozen artichoke hearts and saute on high flame for 4-5 minutes. 2. Then, add salt and pepper to taste. Sprinkle some parmigiano reggiano and stir on high flame for about 30 seconds. 3. Now, remove artichokes in 2 serving dishes and garnish liberally with remaining parmigiano reggiano. 4. Grill asparagus spears wrapped in foil on high flame (or on a stove top grill) for 1-2 minutes. Sprinkle with additional salt and pepper is desired and place on the serving dish. 5. Enjoy!
