I substituted buttermilk in place of water & beat the egg whites then folded in and got a pancake (or waffle) every bit as good as the ones made with wheat. At $2.99 Trader Joe’s Gluten Free Pancake and Waffle Mix is about a third the cost of most gluten free mixes.
