Shrimp and Vegetable Stir-Fry

1 1/2 cups Trader Joe’s Brown Basmati Rice 3 cups Water 1 or 2 packages Trader Joe’s Asian Vegetables with Beijing Style Soy Sauce 1/2 package Trader Joe’s Medium Cooked Shrimp 1/4-1/2 cup Roasted & Unsalted Cashew Pieces OR 50% Less Salt Roasted & Salted Peanuts Cook rice in water according to package directions. About 10 minutes before rice is done, stir-fry vegetables according to package directions, adding shrimp during last few minutes (before sauce.) Serve vegetable-shrimp mixture over rice, and sprinkle with cashews or peanuts. Serves 4 NOTE: We like to serve chilled Canned Mandarin Oranges or one of Trader Joe’s frozen fruit medleys (partially thawed) for dessert with this, with or without a one of Trader Joe’s dark chocolate candies on the side.
