Couscous with Dried Cherries and Almonds

This is great to serve at Easter time as a side dish for lamb 1 T Olive Oil ½ C Trader Joe’s Diced & Ready-to-Use Onions 1 C Trader Joe’s Organic Chicken Broth ¾ C Trader Joe’s Plain Couscous ½ C Trader Joe’s Dried Montmorency Cherries 2 T Trader Joe’s Dry-Toasted Sliced Almonds 1) Heat the oil in a medium saucepan over medium high heat. Add the onion and sauté until softened. 2) Meanwhile microwave the broth on high heat until piping hot, about 4 minutes. 3) Add couscous to the onion and stir to combine. Stir in the broth, cover, and turn off the heat. Let stand until the broth is completely absorbed, about 4 minutes. Stir in the cherries and almonds and serve immediately.
