2 teaspoons Trader Joe’s extra virgin olive oil 2/3 cup chopped green onion 1/2 cup chopped celery 1/2 cup trimmed snow peas, sliced into 1/2-inch pieces 1 teaspoon minced garlic 1 teaspoon grated fresh peeled ginger 2 cups Trader Joe’s organic canned pumpkin 2 cups Trader Joe’s low sodium chicken broth 1-14 ounce can Trader Joe’s light coconut milk 1 teaspoon red curry paste 1 tablespoon lime juice 4 tablespoons chopped cilantro In a large saucepan heat oil over medium. Saute the onion and celery for 10 minutes. Add the snow peas, garlic and ginger and saute 2 minutes more. Stir in the pumpkin and chicken broth, then cook stirring often for 5 minutes. Stir in the coconut milk, curry paste and lime juice, stirring until heated through. To serve ladle soup into bowls and garnish with the cilantro. Serves 6
