Egg Nog Poundcake 1 (16 oz) pkg pound cake mix 1 ¼ c. eggnog 2 large eggs ½ teaspoon ground nutmeg (more can be used if desired) ½ tsp vanilla extract (I used 1 capful of light rum) Preheat oven to 350 degrees. Beat all ingredients together at low speed until blended. Increase speed to medium, and beat 2 minutes. Pour into a lightly greased 9 x 5 inch loaf pan (my recipe made one regular and 2 mini loaves; I used the disposable foil pans). Bake at 350 degrees for 1 hour to 1 hour and 5 minutes or until a pick inserted in the center comes out clean. Cool in pan on a wire rack 10 minutes. Remove from pan to wire rack and cool completely (about 1 hour). NOTE: I tried an experiment with one of the minis – I sprinkled turbinado sugar on the bottom of the pan; came out very nicely!
