6 medjool dates 1/4 cup goat cheese 6 slices thick cut bacon trader joe balsamic glaze Pre-heat oven to 350 Cook bacon on medium, turning often. Cook bacon until medium, don’t allow it to get too crispy. You will need to be able to wrap them around each date. While bacon is cooking, you can pit the dates. Slice a bit off the lengthwise end of each date, take sharp knife to pick out the pit. Crumble up the goat cheese and stuff bits inside each date. A butter knife & a little patience will do it! Drain bacon on paper towels, and wrap bacon slice around the date, if one side is cooked more than the other put that side to the inside of the date. Set dates in pan, if you have a pan you can set the dates in at the edges (to prop them up) it will help keep them from unwrapping. You can secure with toothpicks, but I don’t need to do this unless the pieces of bacon are too skimpy. Bake for 15 to 20 minutes, or until bacon is done enough to suit you. Carefully remove dates from pan, taking care to keep bacon wrapped around each one. Blot on paper towels again. To plate the dates, squirt a quarter sized pool of balsamic glaze on your serving platter, and set a stuffed date on each circle of glaze. Serve warm, enjoy!
