For a twist on turkey, mashed potatoes, and veggies, try an easy Shepherd’s pie recipe. Shepherd’s Pie is a comforting one-dish meal and a favorite in our household. It’s a great way to use up leftover vegetables and a few shortcuts from Trader Joe’s make preparation a breeze. >> This recipe is from the new cookbook “The Trader Joe’s Companion: A Portable Cookbook” 1 pkg ground turkey (approx 1.3-1.4 lbs) 1 Tbsp olive oil 1 medium onion, chopped 1 1/2 cups Turkey Gravy 1 (16 -oz) pkg frozen Organic Foursome, thawed, or other vegetable mixture of your choice 1 (28 -oz) pkg frozen Mashed Potatoes, prepared 3/4 cup shredded cheddar cheese Paprika to sprinkle on top, optional 1) Preheat oven to 375 F. 2) Heat olive oil in a medium-size pan. Add onions and cook until softened, about 5 minutes. 3) Add ground turkey and cook until browned, about 10 minutes. 4) Pour gravy into the cooked turkey and stir until combined. 5) Pour turkey mixture into the bottom of a baking dish. Sizes that work well are 9 x 9 inches or 8 x 10 inches. Top with a layer of vegetables, and then a layer of mashed potatoes. Sprinkle cheese on top. 6) Bake for 20-30 minutes until cheese is melted and casserole is bubbling. Top with a dash of paprika for color.
