vegetable or light olive oil tandoori spice/garam masala (whatever Indian-style spice or spice mix you have handy) 2 cups leftover cooked basmati rice 1-2 green onions, white and green parts minced 1 can cut green beans, drained 2 Trader Joe’s Vegetable Masala Patties 2 eggs cilantro (optional) salt and pepper Heat the patties in the microwave to defrost/warm. Heat about 3 T oil in a large frying pan and add a dash or two of the spice mix (to taste). Stir while oil warms. Add rice, stir to coat. Fry rice for 2 to 3 minutes, then add green onions and green beans. Crumble the patties and add to the rice mix. When rice is fried to your liking and heated through, push the rice to the outside of the pan, leaving a round clearing in the middle. Scramble the eggs in a small bowl, pour the egg into the clearing, and stir as you would regular scrambled eggs, then mix into rice. Salt and pepper to taste, and garnish with cilantro if desired. This is ridiculously good. Serves 2.
