1 can Trader Joe’s Korma Simmer Sauce 1 package Trader Joe’s uncooked colossal buffalo shrimp 1 lemon 1 package Trader Joe’s Thai Jasmine rice 1 tablespoon oil Rinse frozen shrimp in a colander and drain. Fill a bowl with the shrimp and add 1/4 of the Korma Simmer Sauce. Cover with plastic wrap and let the shrimp marinade for about a half hour. Heat oil in a saucepan to medium-high heat. Add shrimp one at a time (discarding the rest of the marinade) and toss in the pan until the shrimp just begin to turn pink and curl. Then add the rest of the sauce to the pan, lower the heat, and cover. While the sauce and shrimp simmer, cut a hole in the package of jasmine rice, place in a bowl, and microwave it for 2.5 to 3 minutes. Stir the shrimp as it simmers. When the microwave bell goes off, turn off the heat on the shrimp and produce your serving bowls. Then remove the rice from the microwave and spoon it onto the bowls, then add shrimp. Serve immediately. VARIATIONS: For extra crunch, toast some chopped cashews and add them to the shrimp. You can also add a spoonful of whole milk yogurt to the sauce as it simmers.
