2 pkgs Trader Joe’s Greewheat Freekeh (8 oz. each) 1 tub Trader Joe’s Pico de Gallo Salsa (12 oz.), drained and rinsed 2 pkgs Trader Joe’s Organic Italian Parsley (.75 oz each), chopped 1 pkg Trader Joe’s Organic Mint (.75 oz), chopped 1/4 C Trader Joe’s Olive Oil Juice of 1 Lemon 1) Combine first 4 ingredients in a large bowl. 2) In a measuring cup, mix the olive oil and lemon juice. Add olive oil mixture to salad and toss to combine. Refrigerate for at least 1 hour (preferably overnight). 3) Before serving, season to taste with salt and pepper.
