Indgridents 1 pkg. chicken chorizo sausage 1 tbl. spoon olive oil 1 container Mirapoix 2 cans White beans 1 container chicken stock low sodium salt and peper to taste remove sausage from casings and brown in pan. Once cooked through remove from pan. Add olive oil and cook mirapoix until tender. Rinse and drain beans and add to pan with the mirapoix. Stir in chicken stock cook until heated through. Use a hand held blender and lightly puree soup. Then add back chicken chorizo and season with salt and peper to your taste. May add sage or cream to soup.
