Ingredients: -1 Tbsp Olive Oil -1 cup Onion, diced -1 cup Red Bell Peppers, diced -4 links Spicy Italian Sausage, cut into 1/2-inch slices -1 cup White Rice, uncooked -3 cups Chicken Broth -1 can of Diced Tomatoes -1 bag of Frozen Shrimp -1 tsp Hot Sauce -Salt and pepper to taste Prep: 1. Saute onion, bell pepper and sausage in olive oil in a large Dutch oven over medium-high heat for 5 minutes, until veggies are tender. 2. Add rice, chicken broth and tomatoes and bring to a boil. Cover, reduce heat and simmer for 20 minutes. 3. Add shrimp, hot sauce, salt and pepper and cook for 5 minutes, until shrimp is no longer frozen.
