Holy cow, is this GOOD. I’m also impressed with the nutritional content. I’m watching my weight, and this is righteous as well as delicious. Eight minutes in the microwave–easy. I served it with butternut squash from TJ’s, cubed and packaged–roasted in the oven with a tiny bit of oil and salt and pepper. Why dine out when you can make such a fabulous dinner for about $5 per person?
