These crisp and crunchy cookies look like miniature biscotti. They are very thin and dark around the edges…very unusual looking but delicious, cholesterol free and with very low sodium. Packed with roasted hazelnuts and sweet figs, they can and almost need to be dunked into a hot beverage (or milk) to “ease” the crunch! These cookies taste great with some creamy cheese spread on top.
