Hawaiian Holiday Stuffing

7 slices Hawaiian sweet bread, cut into 1/2 inch cubes 2 1/2 pounds sweet potatoes 1 green onion, minced 1/3 cup macadamia nut pieces 1/3 cup sliced water chestnuts 1/4 cup snipped mint 1/4 cup snipped parsley 1/3 cup dried tropical fruit bits 1 banana, cut into 1/4 inch thick slices 1/3 cup thinly sliced celery 2 Tbsp butter 2 Tbsp sesame oil 1/2 cup orange juice 1 tsp minced ginger root 1 tsp orange zest 1 large clove garlic, crushed 1/2 tsp crushed red pepper Place the bread cubes on a baking sheet and bake at 350 degrees 25 minutes or till dry. Remove to a large bowl to cool. Wash the potatoes and pierce them with a fork. Place on the baking sheet and bake at 425 degrees 35 minutes or till the potatoes are tender. Cool, then peel and cut into small pieces.Add to the bread cubes along with the next 8 ingredients. In a small saucepan place the rest of the ingredients. Gently heat till hot and well blended. Add to the stuffing mixture and toss gently to evenly moisten. Stuff poultry or place in a casserole dish and bake covered at 350 degrees 45 minutes or till hot. Makes about 7 cups
