2 baked, cooled Pie Crusts, 9″ 1 1/2 c. Florida crystals 3/4 c.+ 2 T. cornstarch 2 t. cinnamon 1/2 t. each nutmeg, ginger, allspice, salt 1 pint Silk creamer 2 c. soy milk 2 c. Trader Joe’s Organic canned Pumkin 2 t. vanilla 1 T. egg replacer powder whipped with 2 T. water Place the ingredients into a blender and blend. You will need to use the blender 2 times to hold it. Place the mixture into a double boiler OR 2 cooking pots that will fit inside each other. Cook over boiling water 10 – 15 minutes stirring with a whip constantly until thikened. Cool some and pour into the baked crusts. People have liked this pie when they don’t like the regular baked pumkin pies. Serve with Cool whip or Hip Whip
