This is an authentic rice dish originated from Shanghai. It is easy to make and you can really taste the distinct flavor of bok choy. Ingredients: 1 package of Trader Joe’s baby bok choy (chopped 2-inch wide) 2 cup of jasmine rice 1 cup of green peas 2 1/4 cup of Trader Joe’s low sodium chicken broth 3 Oz of Trader Joe’s uncured bacon (chopped) 1 tbs of minced garlic 1 tbs of minced ginger 2 tbs of olive oil 1 tsp salt 1/2 tsp pepper Directions: 1. Heat a large sauce pan in medium-heat and add olive oil. 2. Saute garlic and ginger 30 seconds. 3. Add bacon and chopped baby bok choy and continue to stir-fry for another 3 minutes. 4. Add rice, chicken broth, peas, salt and pepper. 5. After it boils, turn to low-heat, cover and simmer for another 20 minutes. occasionally stir as needed. 6. Turn off the heat and let it sit for another 5 minutes. Note: For vegan, you can skip bacon and replace chicken broth with vegetable broth.
