What? You don’t have time to spend hours, making the One True Chili? This is a pretty good approximation. It’s tasty, vegetarian and when I made it, all ingredients except the beef gravy mix came from TJ’s. Olive oil 1 yellow onion, fine dice 1 T. crushed garlic 1 T. dried oregano 1 t. ground cumin 1 t. dried basil 1 T. chili powder 1 pkg. beef gravy mix 1/4 cup red wine + 3/4 cup water 1 can diced tomatoes 1 can black beans, rinsed and drained 1 can kidney beans, rinsed and drained Heat the oil in a sturdy saucepan. Add onion; stir until nearly done. Add garlic; stir until you smell garlic. Add herbs, chili powder, beef gravy mix, and water-wine. Whisk until gravy is thickened and bubbly. Add tomatoes and beans. Simmer, stirring frequently, 10 – 20 minutes. Serves 3 – 4 with a salad, tortillas, and Trader Joe’s Monterey Pinot Noir.
