Mediterranean Salmon In A Bag (serves 2) About 24 Trader Joe’s grape tomatoes, halved and seeded 2 oz. lemon juice 1 oz TJ’s balsamic vinegar, or to taste 1 T. extra virgin olive oil, or to taste 1 T. crushed garlic 1 T fresh basil, chopped or 3 cubes TJ’s frozen basil Kosher salt Fresh ground black pepper Combine above ingredients in non-reactive bowl. Marinate up to 1 hour. Preheat oven to 450. 2 pieces TJ’s Coho salmon fillet Cajun spice (or your fav) TJ’s canned Parmesan cheese (the powdery canned kind works best) 1 shot white wine (Two Buck Chuck Chardonnay works fine) 1 large square foil Place tomatoes evenly on foil pieces, leaving room to crimp. Place fish pieces on top of tomatoes. Sprinkle fish with seasoned salt, then Parmesan. Fold foil in half. Fold edges over in small folds, until the edges just touch fish. Before you crimp the front, throw in the wine. Bake at 450 for about 20 minutes. Open with scissors. Serves 2 with a salad, rice or quinoa, bread, and a dry white wine.
