Reduced Guilt Italian Zucchini-Polenta Bake

dish_thumb.jpgAnother great recipe from The Ultimate Guide to Trader Joe’s.  Fan JessicaSnow tells us "This extremely low calorie and low fat recipe mocks lasagna without all the noodles and cheese but with a delicious corn flavor. You can add ricotta in between the layers if you want to increase the cheese and protein. You can also use Trader Joe’s Turkey Bolognese sauce instead of the Arrabiata to increase the protein and flavor in the dish if desired). " We loved this recipe and hope you will too.

  • One package Trader Joe’s Polenta
  • One jar Trader Joe’s Arrabiata Sauce
  • 3-5 zucchinis (depends on size &
    preference)
  • Grated Parmesan Cheese
  • Italian seasoning to taste

    1. Preheat the oven to 400 degrees. Spray a long casserole dish with cooking spray.
    2. Cut the polenta into thin rounds. It can be difficult to cut without breaking, but broken pieces will not negatively effect the recipe, so don’t worry!
    3. Slice the zucchini length-wise. Sprinkle with Italian seasoning.
    glossy.gif4. In the casserole, layer polenta, zucchini (this should be a couple layers of slices thick), sauce and cheese (just a sprinkling). Repeat until you have reached the top of the casserole, making sure to end with the sauce and cheese layers. Cover the casserole with foil.
