2 Tbsp. Olive Oil 3 Colored Peppers (Red, Orange, Yellow) 1 Party Sized Tub of Mild Salsa 2 Cans Black Beans 2 Cups Water 1/2 Bag Frozen Mango Garlic Salt Pepper Hot Sauce 2 Cups of Grains (quinoa, brown rice, etc) 1 Package of Pollo Asada Bake chicken as directed on package. Prepare grains as directed on package. Heat up the olive oil in a large pot on medium heat. Dice the peppers and add to the pot. Season with garlic salt, pepper, and hot sauce. Cook for five minutes. Dice the mango and add to the pot. Add salsa, black beans, and water. Simmer for 10 minutes. Cube the chicken and stir into the soup. Add the grains to the pot. Serves 8-10.
