4 Trader Joe’s blue corn tortillas 4 Trader Joe’s Cage Free eggs 1/2 can Trader Joe’s refried beans, warm 4 Tbs Trader Joe’s Salsa Authentica 1/2 cup Trader Joe’s Mexican Blend shredded cheese Olive oil for frying optional: Sour Cream Guacamole In a sautee pan heat 1 tablespoon of oil. Lightly fry the tortillas until they are slightly crisp but still soft. Place two on each plate allowing the tortillas to overlap and spread beans on each tortilla. In the same pan add another tablespoon of oil and fry eggs* two at a time. Place eggs on top of tortillas and top with salsa and cheese. Place under broiler to melt cheese. Garnish with sour cream and guacamole. *Cook the eggs how you would prefer (sunny side up, over easy, etc) It’s best if the eggs are a bit runny as the yolks can ooze into the salsa and beans.
