1-package Trader Joe’s Chimichurri Wild Pacific Salmon 4-Trader Joe’s Habanero Lime Flour Tortillas 4 slices-Trader Joe’s Sliced Yogurt Cheese 1 avocado sliced into small cubes 1/2 container cherry tomatoes cut in halves 1/4 chopped red onion 1 tbsp. finely chopped cilantro 1 tbsp olive oil (Trader Giotto’s Sicilian Selezione Extra Virgin Olive Oil has a nice slightly peppery finish) Squeeze of lime Pinch of Sea Salt chopped parsley Preheat oven to 400 degrees. Place fish and marinade(already in package) into a safe baking dish(uncovered). Cook for 12-15mins. In a bowl combine avocado, tomatoes, red onion, cilantro, squeeze of lime and sea salt. Mix well and set aside. Heat olive oil in a skillet over medium heat, add one tortilla at a time with a slice of cheese. Heat until cheese becomes soft. Pull tortilla from the pan onto a dish, fill with some of the baked salmon, spoon veggie mixture over it and sprinkle on a little bit of parsley to finish. People come to my house BEGGING for these!
