1 can TJ’s black beans, drained and rinsed 1/2 bag TJ’s frozen sweet corn 1 jar TJ’s jarred salsa of your choice 1 handful of fresh cilantro, chopped juice of one lime This salad is super simple, a favorite at potlucks and picnics, and can easily be made into a main course. In a bowl, add all ingredients and stir to combine. I then let the dish sit in the fridge to let the flavors blend and the corn thaw. I serve the dish chilled, but it can easily be warmed up if desired. At times, I add a container of TJ’s “Just Chicken”, or other cooked chicken breast strips. I then spoon it over TJ’s small corn or flour tortillas, and voila!! You’ve got some easy yet tasty chicken tacos. This recipe can easily be doubled, and can be made the day before it’s needed.
