By Corinne Meyer Serves 6 6 Trader Joe’s spinach flour tortillas 2 Trader Joe’s organic free range boneless skinless chicken breasts 3T Trader Joe’s extra virgin olive oil 1T Cajun seasoning ¾ C Trader Joe’s avocado’s number guacamole ¾ C corn & chile tomato-less salsa 1C Trader Joe’s organic baby romaine 6T Trader Joe’s cilantro salad dressing Dice up the chicken breasts into bite sized pieces. Place chicken in a large zip-loc bag. Drizzle the chicken with 2T olive oil and dust with Cajun seasoning. Seal the bag and shake rigorously to evenly coat chicken. Add remaining 1T olive oil to a large non-stick skillet and cook chicken for about 8 minutes or until cooked through and nicely browned. Spread equal portions of the guacamole onto each tortilla. Add equal portions of the greens, salsa, and chicken. Drizzle 1T cilantro dressing over the filling on each tortilla. Fold the wraps and enjoy!!!
