4 cups of day old french bread 3 T. extra virgin olive oil kosher salt, to taste dressing: 1/4 cup balsamic vinegar 1 T. dijon mustard 1 T. honey 1 T. extra virgin olive oil 4 T. plain Greek yogurt salt and pepper, to taste 5 slices Trader Joe’s Fully Cooked Uncured Bacon 1 pint Trader Joe’s mini heirloom tomatoes, sliced in half 1/4 cup basil chiffonade Butter lettuce leaves, washed and patted dry Prepare bread for salad, tear into 1 inch pieces place onto baking sheet, toss with oil and season with salt. Bake at 300 until very light brown and crusty. Prepare dressing by whisking first five ingredients in order listed until well blended. Season with salt and pepper. Prepare bacon according to package and crumble into good sized pieces into a large bowl. Add tomatoes, basil, bread pieces, HALF of the dressing and toss gently.
