The combination of macadamia, mango and coconut remind me of a tropical vacation! Wishful thinking but at least my mouth is happy! Ingredients: (6 muffins) 1 egg 1/2 c buttermilk 1/4 c vegetable oil 1 c all-purpose flour 1/4 c granulated sugar 1 tsp baking powder 1/4 tsp salt 1/2 c mango chunks (half a mango) 1/4 c shredded unsweetened coconut flakes 1/4 c Macadamia nuts Prep: 1. Preheat oven to 375°F. Line 6 muffin cups with paper baking cups. 2. In medium bowl, beat egg slightly with buttermilk and oil. Stir in flour, sugar, baking powder and salt just until moistened. Stir in mango, coconut and nuts. Divide batter evenly among muffin cups. 3. Bake 25 to 35 minutes or until golden brown.
