4 boneless, skinless chicken breasts 1 cup Trader Joe’s cilantro salad dressing 2 cups breadcrumbs Pound out chicken between two sheets of plastic wrap with a meat pounder or rolling pin. Marinate chicken in a bowl or plastic bag in the salad dressing for 2 or more hours. Pour bread crumbs into a pie pan or plate. Remove chicken from marinade, shake off any extra. Cover chicken in bread crumbs pressing down on each side and place on lighted greased baking pan. Bake at 400 for about 20 minutes or until you reach an internal temperature of 165 degrees.
