1 cup Trader Joe’s Almond Butter w/ Roasted Flaxseeds (or Valencia Peanut Butter w/ Roasted Flaxseeds) 1 cup sugar or non-sugar sweetener 1 egg 1 tsp Trader Joe’s Pure Bourbon Vanilla Extract Preheat oven to 350 degrees and lightly grease a cookie sheet. Mix all ingredients together and roll into 1 1/2 inch balls. Place balls about two inches apart. Flatten the balls with a fork dipped in sugar/sweetener. Bake until set: 8 – 10 minutes. Makes around 10 cookies. [These cookies have more of a shortbread consistency, but couldn’t be easier to make when you have a sudden craving (or company).
