Mediteranian Turkey sandwiches

1/2 LB TJ’s Ground Turkey 2 Persian Cucumbers, peeled 2 Roma Tomatoes 1 Tbs Olive Oil 4 Tbs TJ’s Hummus (I prefer spicy hummus for this recipe) 4 Tbs TJ’s Tahini Sauce 1Tbs TJ’s White Balsamic Vinegar 1 Tsp Tarragon 2 Tsp Salt Fresh Ground Pepper 4 Pieces Trader Joes Indian Flat Bread 2 cups TJ’s baby lettuce mix PREPERATION: Preheat oven to 400° In a bowl, mix the turkey with 1/2 Tbs olive oil, 1 tsp salt, Tarragon and fresh ground pepper. Form into two patties and set aside. Dice the tomatoes and the cucumbers and sprinkle with vinegar and 1 Tsp salt. Set aside. COOKING: In a skillet, heat 1/2 Tbs of olive oil over medium heat. When oil is hot place the turkey patties in the skillet. Cook for 3 minutes or until brown on the bottom, flip patties and cook for 3 more minutes. Remove and let sit for a minute or two. On a cookie sheet, heat up the Indian flat bread in the oven until lightly toasted, 2-3 minutes. Cut the turkey patties in half. On each piece of flatbread, spread 1 tbs Tahini and one Tbs hummus. Place a half turkey patty on the bread and a quarter of the tomato/cucumber mixture. Place a bit of lettuce over the top and serve. Serves 2
