For the sauce: 1 md-lg onion, diced 2 cloves garlic, minced 3/4 jar Trader Joe’s Three Pepper Salsa 2/3 or about 16oz Trader Joe’s Organic Ketchup 2 bay leaves 3 shakes Worcestershire For the meatloaf: 2 eggs 1 T olive oil 1/2 C Trader Joe’s Organic breadcrumbs 1/8 C chopped parsley 1/4 C three pepper sauce, cooled 2# ground beef (preferably TJ’s Organic 85/15) 1 t salt 1/2 t pepper For the sauce: In a heavy bottomed pot, heat 1 T olive oil. Saute onion until translucent. Add garlic and saute one minute more. Add salsa, ketchup, bay leaves and Worcestershire. Stir to combine and let simmer over low heat for about 15 minutes. Remove 1/4 C three pepper sauce and spread on a plate. Place in freezer so it will cool quickly. For the meatloaf: Pre heat oven to 375 degrees. In a large bowl combine eggs, breadcrumbs, parsley, oil, salt and pepper. Add salsa once it has cooled. Add ground beef only mixing until just incorporated. Form meat mixture into a loaf on a sheet pan. Spread more of the pepper sauce on the outside of the meatloaf, making sure you cover the entire exterior with a thin layer. Bake for one hour. Let rest before slicing for 5-10 minutes. Serve with remaining three pepper sauce.
