Trader Joe’s English muffins/ one per person Niman Ranch Applewood Smoked Bacon/ 2 pces per sandwich eggs/ one per sandwich Sliced cheese (swiss, cheddar, munster, pepperjack….) Butter(opt.) and toast opened English muffins. Keep warm. Fry bacon til crisp, drain, divide between English muffins and close tops, to hold while cooking eggs. Pour most of the bacon grease out of the pan, fry egg to desired doneness. Salt pepper and top with cheese, allowing cheese to melt somewhat. Place cheesed egg on top of bacon, close the muffin. Voila! Egg McMommy breakfast sandwich!
