½ bag of Trader Joe’s Seafood Blend One small onion 3-4 cloves of garlic Box of mushrooms Can of black beans, drained ½ red pepper Olive and sesame oil 2 tbsp. black bean sauce Salt and pepper Juice of ½ lime In a wok, heat the seafood blend in olive oil, then drain it in a colander. Dry the wok with a paper towel. After heating more olive oil and a touch of sesame oil in the wok, sauté the onion until translucent. Add the garlic, mushrooms, and red pepper and cook until the mushrooms reduce. Add the drained black beans and the seafood blend. Season with salt and pepper to taste. Mix in the black bean sauce, coating the ingredients thoroughly. Add the lime juice and then turn off the heat. Serve with brown rice or couscous.
