2 tblsp Trader Joe’s Peanut Oil 1/2 pkg. Trader Joe’s Extra Firm Tofu (cubed) 1 1/2 C Trader Joe’s Shredded Cabbage 3/4 C Trader Joe’s Shredded Carrotts 1/2 Medium Onion 1 egg (beaten) 1/4 C Trader Joe’s Asian Dipping Sauce 1/4 C Trader Joe’s Chili Lime Peanuts or Cashews Lemon Heat oil over medium-high heat in non-stick pan or wok. Add tofu and stir fry until light brown. Add cabbage, carrotts, and onion and continue to stir fry until vegetables are tender (approximately 3-4 minutes). Add the Asian sauce and mix well. Move tofu/vegetable mixture to one side of the pan to make room for the egg. Scramble egg, seperating into sections until done and then combine with the rest of the ingredients in the pan. Serve topped with crushed nuts and a squeeze of lemon. Salt to taste. Makes 2 Large Servings
