Ingredients: 1 onion, chopped 1 carrot, diced 1 stalk celery, sliced 1 small potato, diced 1 clove of garlic, minced 2 cups trader joes marina sauce 4 cups water 1 cup red lentils pinch tarragon ¼ cup dry white wine vinegar Pinch chili pepper (optional) dollup of trader joes nonfat greek yogurt ½ cup fresh chopped parsley salt and pepper to taste Directions: Saute potato, onion, garlic, carrot, celery in olive oil in a heavy bottomed soup pan until softened. Add tomatoes, water and lentils. Add spices and herbs. Cook on low heat for approximately 1 hour until all ingredients softened. Serve with a dollop of sour cream and a slice of crusty bread.
