Roasted Vegetable Pesto Pita Pizzas

Preheat oven to 425 degrees. Prepare Fire-Roasted Vegetables with Balsamic Butter as directed. Take 2 pieces of Trader Joe’s Pita Bread and spread a light layer of Trader Joe’s Genova Pesto on pitas. Then spoon some of the Fire-Roasted vegetables on top of the pitas, spreading them around to cover the entire pita. Sprinkle top of vegetable pitas with a little bit of shredded cheddar cheese or mozzarella or Parmesan/Romano blend. Put pita pizzas onto cookie sheet in the preheated oven and bake for 10-12 minutes. Take out of oven and let cool for a minute or two, and slice up into quarters or smaller with a pizza cutter. Serve and enjoy!
