Roast in a preheated oven at 400º for about 40 to 45 minutes, basting with broth halfway through. ****The bread and ratio can be altered to suit, but this is how I prepared this dish **** This was a quick meal as I had extra pumpkin butter spread left over from a fellowship (seeing as nobody knew what it was, the spread was left untouched. Not wanting to waste the spread, I wrapped it up. I had purchased the cornish game hen figuring it would be a quick and easy meal for a single person. Lacking something else to season the hen with, I decided to give the pumpkin spread a go. I added the oil to decrease the sweetness a bit. I said to myself that it was an experiment that I am not sure would go well. I’m a very picky eater. To my happy surprise, the hen came out wonderful. Something I will definitely try again. Something I would attempt for a dinner party even! My cat (who always insists on sharing my chicken) even loved it! Ingredients can be altered to suit your taste.
