Warm German Potato Salad

4 bags Trader Joe’s Fingerling Potatoes (1 lb each) 1 pkg Trader Joe’s Apple Smoked Bacon (12 oz), diced 2 large eggs, well beaten 1 cup sugar 1 cup apple cider vinegar 1 teaspoon salt 1 tablespoon Trader Joe’s Dijon Mustard 1 medium Yellow Onion, sliced Cut the corners of each bag of potatoes, and microwave (in the bag) for 6 minutes each. Fry diced bacon in a large pot. While bacon is frying, mix beaten eggs, sugar, vinegar, salt, and mustard together in a bowl. Pour mixture into hot pan with bacon and bacon grease (don’t worry. Because of the vinegar, the eggs will not scramble), add onion and stir until mixture is thickened. Add potatoes, stir thoroughly, and serve immediately.
