Trader Joes Chicken Fajita Burrito with Black Bean and Roasted Corn Salsa

burrito_sm.jpgI love any and all food that hails from a place where people speak Spanish, so I am willing to try anything Mexican Style from Trader Joe’s. I was at my local store this week and decided to pick up one of these Chicken Burritos from the freezer section and give it a shot. You simply cannot expect a lot from a frozen burrito, especially because what you’re relying on is the label, ingredients, and lastly your imagination. Like I said, I was willing to give it a shot.

Normally I douse my Mexican food with a generous amount of cheese, guacamole and my favorite salsa. This time, I was thinking simple. I chose Trader Joe’s Black Bean and Roasted Corn salsa, and an avocado to accompany my (hopefully) bodacious burrito.

burrito.jpgSo I got home, popped the burrito in the microwave for 5 minutes to defrost it, and toasted for another 5 in the oven. Fingers crossed.

I sliced my avocado and poured on the salsa. One bite in and I’m happy. It was crispy and flaky on the outside, and held up throughout its bout in the microwave & oven. The first thing I noticed was that the pieces of chicken were big, bite-sized, and ample. Right away I felt I got more than my money’s worth. The rest of the hot tortilla was filled with rice, onions, cheese and chilies.

As good as the burrito was, I have to say the Black Bean and Roasted Corn Salsa was the perfect compliment. Medium hot, it delivers the tangy tartness you expect from a salsa, but it’s perfectly balanced by visibly roasted sweet corn, and buttery black beans. This combination is definitely a winner with a slice of avocado along for the ride.
