1 chopped onion 1 clove of garlic 1 pkg Trader Joe’s Chorizo Sausage 1 can tomato paste 1/3 cup oregano Saute a chopped onion and a chopped clove of garlic in a deep pot. Add a package of TJ’s chorizo sausage. You can dump it into the pot (after removing the casing). Mash it up with the onions and garlic letting it simmer for a few minutes. Add a can of tomato paste and 3 cans of water so it’s on the liquid side. Add 1/3 cup oregano, chili powder to taste and the rest of your secret ingredients (such as lemon juice and brown sugar, ketchup, molasses, a little beer if you like, etc.) Turn the heat down and let this all simmer together until it’s nice and hot. If you want conventional chili, add beans whenever you’re ready and cook slowly until they’re tender. Keep the lid on the pot to keep the water in the pot.
