A healthy alternative to those of us who grew up with chorizo. Use about 3 inches of the soy chorizo and two or three eggs, depending on how meaty you enjoy your chorizo. In a skillet, use about 1 to 2 table spoons of canola oil. Heat the oil first, then add chorizo and let it cook to your liking. In a bowl mix in the 2 or 3 eggs. Next, add the eggs to cook with chorizo. Serve burrito style and add guacamole or a little salsa. Great recipe if you are in hurry to get to work and what something on the go.
